Bao with chicken chunks

Ingredients

- Chunks of breast fillet Délices & Snacks
- ½ cucumber
- 20g sun-dried tomatoes

The sauce:
- 20cl single cream
- Black sesame seeds
- 4 to 6 tsp soya sauce
- 120g cucumber
- 5 leaves of mint
- Salt and pepper

Bao buns:
- 67ml lukewarm water
- 100ml hot milk
- 8g fresh yeast
- 40g sugar
- 3 tbsp vegetable oil
- 300g flour
- Salt and pepper

Preparation

Bao buns:
1. Mix the lukewarm water, hot milk and the fresh yeast in the bowl of a mixer. Leave to rest for 10 minutes.
2. Add the salt, sugar and the flour. Knead until the dough comes away from the sides of the bowl.
3. Cover the bowl with cling film and leave the dough to rest for 30 minutes at 30°C.
4. Degase the dough, form balls of equal size, then bake at 150°C for 45 minutes.

The sauce:
1. Whip the cream, then stir in the soy sauce, finely diced cucumber, finely chopped mint, black sesame seeds and seasoning.
2. Mix well and adjust the seasoning if necessary.

Chunks of breast fillet:
1. Cook the chunks of breast fillet at the last minute: 4 minutes 30 seconds at 180°C in the deep fryer.

The presentation:
1. Open the bao buns and coat them with sauce.
2. Add a few sun-dried tomatoes, cucumber slices and chunks of breast fillet.
